Recipe Friday: Maple "Baked" Custard

I thought that I should be stock-piling recipes using eggs for when I get my chickens!  This recipe comes from Dr Weil, but I couldn't find it on his website anymore.  I've had it for about 10 years and it's a nice dessert to make without a ton of sugar.

Maple "Baked" Custard

2 eggs
1C skim/soy milk
2 TBSP maple syrup
1/2 tsp vanilla
nutmeg

Comine eggs, milk, syrup and vanilla.  Whisk until blended.  Pour into 3 glass custard cups.  Sprinkle with nutmeg.  Place cups ona folded paper towl in a skillet with a lid.  Pour water, 1 inch deep and cover.  Bring water to a boil.  Cover and simmer for 15-20 mintues.
