Recipe Friday: Coconut Rice

In honor of Family Fun Night last night, which was at the kids' school and had a Hawaiian theme, today's recipe is Coconut Rice, from The Bride And Groom: First and Forever Cookbook.  I love it and so did Olivia.  Ellie gave it a thumbs up, but didn't eat a ton.  Evan's not a huge fan, but he doesn't really like sweets too much either, so I don't really hold his opinion too highly.  Anyone that says, "No thanks."  when offered dessert can't be trusted.



Coconut Rice

3/4 C plus 2 TBSP well-stirred unsweetened coconut milk
3/4 C water
1/2 tsp kosher salt
3/4C basmati rice
1/2 tsp finely chopped lime zest
2 tsp thinly sliced green onion, both white and green parts

Combine the 3/4 C coconut milk, water and salt in a medium saucepan over high heat and bring to a boil.  Stir in the rice.  Reduce the heat to low, cover, and simmer until most of the liquid is absorbed, about 15 minutes . (I find that it takes a lot longer than that,) Remove the pan from the heat and let stand, covered, for 5 minutes.  Stir in the 2 TBSP coconut milk, lime zest and green onion.
