Growing Vegetable Soup

Here's your Friday recipe!  It's a really good vegetable soup recipe that I got in the back of a children's book, of all places.  It's from Lois Ehlert's Growing Vegetable Soup, a cute book about kids that plant a vegetable garden and how the plants grow until they're ready to be harvested and eaten in a vegetable soup.

Vegetable Soup

1lg onion-diced
2 carrots-diced
1 medium potato-diced
9 green beans in 1 in pieces
1/6 small head of cabbage-shredded (don't use red cabbage because it turns your whole soup purple!)
4 boullion cubes
5C water
1 big handful of peas
1 talk broccoli-choped
3 medium tomatoes- diced
1 sma green pepper-diced
1 (5-6in) zucchini in 1/2 moons
1 ear of corn-kernals removed
1/2 C minced parsley
2 tsp herbes de Provence (this is my own addition.  You can try other herbs if you'd like)
salt and pepper to taste

In a large pot mix onion, carrots, potato, green beans, cabbage, boullion and water.  Bring to a boil.  Reduce heat to medium-low and simmer, uncovered 10 minutes.  Add remaining ingredients.  Bring to a simmer, season with salt and pepper.  Simmer uncovered, until vegetables are tender-crisp, 20 minutes.
