Conserving Oxygen

Today I'm being green because I haven't had a chance to catch my breath...thereby conserving our precious resource, Oxygen! Of course because I've been running like crazy, I'm also burning a lot of fossil fuel in the form of gasoline...that electric car is sounding better and better!

I'm making a recipe from The Cleaner Plate Club tonight for dinner. It's breaded zucchini and eggplant rounds topped with tomato sauce and then a ricotta/mozzarella/basil topping. We'll see how it goes over. We're all running every which way tonight so I thought it might work as a quick meal to grab and go. It's definitely healthy, unless you count all the non-vegan cheese! I guess healthy depends on which diet you follow!
